Bitter Gourd / Kakarakaya Curry


Once I tried fry with bitter gourd. We were unable to eat tht amt of bitterness. So we stopped getting bitter gourds for a long time. Last week when I was not feeling well, my husband cooked this Bitter gourd curry and Sambar. The bitter gourd curry is too good there is no bitterness. And I took whole rice with tht curry only. I didn’t taste sambar at all. As I told u earlier he cooks well.

So this time I made tht curry in his style. Even this is good. If u want to make bitter gourd without bitterness, try in this way.

Learnt From: My Husband

Serving for: 2 people

Ingredients:

Bitter gourd --- 4


Onions --- ½ of the big one
Tamarind paste --- 1 ½ tsp
Salt --- to taste
Red chilly powder --- ¾ tsp
Oil --- 5 tblsn

Process:

Slightly peel the skin of bitter gourd.


Clean them with water.
Chop them to thin slices. Keep them in a cooking pan.


In a bowl add 1 ½ tsp of tamarind paste. Mix it with 1 ½ cups of water.
Add this tamarind juice to the sliced bitter gourd.


Boil the bitter gourd with tamarind juice till the bitter gourd becomes tender. (this step is to take off the bitterness from bitter gourd.)


In the mean while chop half of the big onion into pieces.
Drain the tamarind juice with the help of a strainer.
Keep the strainer under running water in order to remove the tamarind extract from the cooked bitter gourd.


Squeeze the excess water with your palm. Keep them aside.
Heat 5 tblsn of oil in a pan.
Add chopped onions to the pan. Fry till the onions turn to brown colour.


Then add the cooked bitter gourd and enough salt into the pan. Fry them they are slightly brown.


Add ¾ tsp of red chilly powder to the pan. Mix well.
Turn off the heat. Transfer it to a serving bowl.


Have it with rice.
Tastes really good.
