Carrot Chutney
This chutney is very easy to prepare. We prepare this with raw carrots. So vitamins won’t be diluted. If this chutney is there... I skip all the remaining dishes and eat with this chutney only.

I learnt this chutney from my mom.
Ingredients:
Carrot
Red chilly powder
Salt
Lime juice
Garlic (optional) --- 1 clove
For Seasoning:
Oil
Urad dal
Mustard seeds
Cumin seeds
Red chilly flakes
Curry leaves
Process:
Peel the skin of the carrot.
Grate it.
If you want you can also add grated garlic to the carrot.
Add salt, red chilly powder, lime juice.
Mix it well.
Taste and adjust it.
Heat one spoon of oil in a pan.
Add & Toast seasoning like … urad dal, mustard seeds, cumin seeds, red chilly flakes and curry leaves.
Add seasoning to the carrot.
Mix it well.
The yummy Carrot chutney is ready.
