Creamy Tomato Soup


My Brother told me thay my sister-in-law prepares this soup very nice. The taste is as like as which we have in hotels. He complimented his wife and told me to learn that from her. Getting a compliment from husband. Quiet tough task... right? My sister-in-law got that. Keep it up Vadina.

Learnt From: My Sister-in-law (Lakshmi Srinivas)

Makes for: 4-5 people.

Ingredients:

Tomatoes --- 8


Carrots --- 2
Onion --- 1
Garlic --- 3 cloves
Water --- 4 cups (1000 ml) (1 litre)
Red chilly powder --- ½ tsp
Sugar --- 3/4 tsp
Salt --- to taste
Corn Flour --- 1 tsp
Pepper --- as per taste

Process:

Clean tomatoes with water. Keep them in pressure cooker.
Peel the skin of carrots. Cut the head the tail. Clean the carrots with water. Keep them in pressure cooker.
Cut the head and tail of the onion. Remove the skin. Clean it with water. Cut to two parts. Keep them in pressure cooker.
Remove the skin of garlic. Cut the head of it. Keep them in pressure cooker.
Pressure cook all the tomatoes, carrots, onion & garlic together with 4 cups of water for 3 whistles.


Wait till the pressure goes off. It takes about 15-20 minutes.
Strain the water. Keep that aside.
Remove the skin of tomatoes. Keep them in a blender.
Add all the remaining stuff like cooked carrots, onion & garlic too to the blender.


Blend them to a smooth paste.


Turn the flame to Medium-High. In a big pan transfer the blended paste.
Cook it for 15 minutes. Stir occasionally.
Add the strained water to the pan.


Add enough salt, ½ tsp of red chilly powder and 3/4 tsp of sugar. Mix well.
In a small bowl… take 1 tsp of corn flour. Mix with little water without any lumps. Add this to the pan.
Cook it for 2 boils which takes almost 20-25 minutes.
Turn off the heat.
Transfer the soup to a serving bowl.
Add pepper and bread crumb cubes. Serve hoooooooot.
