Potato Tomato Curry


My husband asked me to cook in this way. He likes this curry very much.

Ingredients:

Potatoes --- 3
Tomatoes --- 2
Green Chilies --- 4
Onion --- ½ of the big one
Salt --- as per taste
Turmeric Powder --- a big pinch
Red Chilly Powder --- ½ tsp (optional)

For Seasoning / Tadka / Popu:

Oil --- 2 tblsn
Urad dal --- 1 ½ tsp
Mustard Seeds --- 1 tsp
Cumin Seeds --- ½ tsp
Red Chilly --- 1 (chopped)
Curry Leaves

Process:

Peel the skin of potatoes. Chop them into cubes. Pressure the chopped potato cubes in salted water with a pinch of turmeric powder for 3 whistles.


Wait till the pressure goes off. Drain the water.


Meanwhile, chop green chilies, onion & tomatoes.
In a sauce pan, Heat 2 tblsn of oil. Add and toast seasoning one by one like … urad dal, mustard seeds, cumin seeds, & chopped red chilly.
Add curry leaves & chopped green chilies. Fry till the green chilies get white spots.
Add chopped onions. Fry till they become transparent.
Add chopped tomatoes, a pinch of turmeric & enough salt.


Cover it and cook till the tomatoes become mashed. Add water if required.
Gently press the cubes and add boiled potato cubes to the pan. Adjust salt.
Cook for 2 minutes.
Add red chilly powder if you want the curry more spicy.
Mix well. Cook for a minute.
Turn off the heat.
Transfer the curry to a serving bowl.


Have it with rice.
