Pav Bhaji


In my native place we have pav bhaji stalls especially prepared by Marwadi people. I love the taste of pav bhaji. I never had a thought of making it. But oneday at the time of browsing just like that I searched for pav bhaji. I got the recipe. Just I bought pavs and pav-bhaji masala and prepared. It came out good. I felt very happy.

It is very easy to prepare. It is a 3 step process. (1) Cooking vegetables (2) Adding flavour to the cooked vegetables and (3) Toasting pavs. Done. Enjoy the taste.

Can serve for 6 people (each 2).

Ingredients:

Pavs (Buns) --- 12 no’s


Potatoes --- 2 big one
Carrot --- 2 big one
Tomatoes --- 2 big one
Capsicum --- 1
Cabbage --- ¼ of small one
Cauliflower --- 1 cup florets
Onions --- 1 big one
Green Chilies --- 3 small one


Green peas --- 3/4th lb frozen (wht I used)


Pav Bhaji Masala --- 6 tsp (I heard that ‘Everest’ brand is good. But I got MDH… even this is good.)
Red Chilly Powder --- 1 ½ tsp
Ginger-Garlic Paste --- 1 tsp
Turmeric Powder --- ¼ tsp
Salt --- as per taste
Oil --- 7 spoons
Butter --- ½ stick
Lemon --- 2 big one
Tomato Puree --- 3 tsp (optional)

Process of making Bhaji:

Chop potatoes, carrots, cauliflower, cabbage finely.


Pressure cook all the chopped potatoes, carrots, cauliflower, cabbage in salted water for 3 whistles.


Wait for 10 minutes till the pressure goes away.
In the meanwhile, chop green chilies, onions, capsicum and tomatoes very finely.


Mash all the cooked vegetables coarsely with a masher or a big spoon when they are hot.
Heat oil a deep pan.
Add half butter stick.
Add one tsp of Ginger-garlic paste and fry it for a while.
Add chopped green chilies, half of the onions (keep the other half aside).
Fry till onions turn to transparent colour.
Add 6 tsp of Pav-bhaji masala, 2 tsp of Red chilly powder, ¼ tsp of Turmeric powder and Salt.
Mix it well.
Add chopped capsicum.
After a while add chopped tomatoes and frozen green peas.


Fry till the capsicum cooks.
Add mashed vegetables.
Stir it up to mix properly.
Add 3 tsp of tomato puree (this is optional).
Taste it and adjust the salt.
Turn the heat to sim.
Cook it for 10 minutes.
Turn off the heat.


Add lemon juice and the remaining chopped onions.

Process of toasting pavs:

Take each pav…


Slit the pavs horizontally. But one edge should be attached.


Heat frying pan.
Apply butter on it through scratching the butter on the pan.


Toast the pavs on both sides by moving it on the griddle to absorb the butter into it.


Now have it with bhaji when it is hot.
