I learnt this curry from my Mom.
Ingredients:
Carrots --- 4
Green Chilies --- 5 small
Onion --- ½ of the big one
Turmeric --- a pinch
Salt --- as per taste
For Seasoning:
Oil --- 3 tsp
Urad dal --- ½ tsp
Mustard seeds --- ½ tsp
Cumin seeds --- ¼ tsp
Dry red chilly --- 1 (plucked into pieces)
Curry leaves --- 5-6 leaves
Process:
Peel the skin of the carrot.
Clean the carrots with water.
By holding the head of the carrot grate it with the help of grater.

Chop Green chilies and Onions into small pieces.

Heat oil in a deep pan.
Add & Toast seasoning one by one like urad dal, mustard seeds, cumin seeds, dry red chilly pieces and curry leaves.
Add and Sauté chopped green chilies and onions till the onions turn to transparent colour.

Add grated carrot, turmeric powder and enough salt.

Cook till the carrots lose its rawness.
Transfer the stuff to a serving bowl.
