I learnt this curry from my husband.
Ingredients:
Cucumber --- 1 Big one (Which is available in US) --- Peel the skin of the cucumber and remove the seeds. Then chop them into cubes.
Tomato --- 1 medium size --- chop into cubes
Onion --- ½ of the big one --- chop into cubes
Green chilies --- 4 medium small --- chopped
Tomato Puree --- 2 spoons
Red chilly Powder --- ½ spoon
Salt --- as per taste
For Seasoning:
Oil --- 3-4 spoons
Urad dal
Mustard seeds
Cumin seeds
Whole red chilly --- 1 chopped
Curry leaves --- 4-6
Process:
Heat 4 spoons of oil in a deep pan.
Add and toast seasoning one by one like urad dal, mustard seeds, cumin seeds, red chilly and curry leaves.
Add chopped green chilies… Fry them till they get white spots.
Add chopped tomatoes… and fry them for a while.
Add chopped cucumber, turmeric powder and salt.
Turn the heat to medium flame and cover the pan with lid.
Stir it occasionally.
When the cucumber is cooked well (take one piece and press it with finger…it should be tender some) …taste the cucumber piece... if required adjust salt.
Add half a spoon of red chilly powder and remove the lid.
After a while stir the curry and turn the heat off.
Transfer the curry to a serving bowl.
Can take it with rice.Tastes soar and good.
