Black Eyed Beans Curry
Learnt From: My friend Sunitha.
Ingredients:
Black Eyed Beans --- 1 Rice Cooker Cup
Onions --- 1 big
Tomatoes --- 2 medium
Salt --- to taste
Red chilly powder --- 1 tsp
Coriander powder --- 2 tsp
Cumin powder --- 1 tsp
Lemon --- 1
Pre-Requisite:
Clean and soak black eyed beans in water for 4-6 hours. If I am going to make this curry for the supper time I soak this in the morning after or before break fast or afternoon before or after lunch.
For Seasoning:
Oil --- 1 tblsn
Mustard Seeds --- 1 tsp
Cumin Seeds --- ½ tsp
Process:
Chop 1 big onion and 2 tomatoes into small pieces.
Heat a tblsn of oil in a pressure cooker.
Add & toast mustard seeds and cumin seeds.
Add half of the chopped onions and keep the rest aside.
Add chopped tomatoes.
Drain the water from the soaked black eyed beans and add the soaked ones.
Add a pinch of turmeric powder, enough salt, a tsp of red chilly powder, 2 tsp of coriander powder and a tsp of cumin powder.
Mix well.
Pressure cook for 3 whistles.
Wait till the pressure goes away.
Mix well. Take the curry to a serving bowl.
Serve it with lemon wedges and raw chopped onions.
Tastes great with pulka or chapathi.
