Seasoning Rice / Thalimpu Annam

Whenever we have so much of rice left over… my Mom prepares this one. It is very tasty and easy to prepare. All of our family members like this recipe. It is one of our favourite Break-Fast.

Obviously from my Mom.

Ingredients:

Rice --- ½ - ¾ cup (approx…)
Green chilies --- 8 small (Slit horizontally)
Onions --- ½ of the big one (Chopped)
Turmeric powder --- a pinch (for colour)
Salt


For Seasoning:

Oil --- 2 tsp + 2 tsp
Peanuts --- 3 tsp
Channa dal --- 2 tsp
Urad dal --- 1 tsp
Mustard seeds --- 1 tsp
Dry red chilly --- 1 (chopped)
Curry leaves --- 6 -7



Process:

Mix the rice with hand to make them separate.
Heat oil in a pan.
Stir fry peanuts, channa dal, urad dal, mustard seeds, dry red chilly.
Add them to the rice.
Add turmeric powder too to the rice.
Mix it well.
Add oil to the pan.
Stir fry chopped green chilies and curry leaves till white spots form on green chilies.
Add onions and enough salt to the onions.
Stir fry till the onions turn to golden brown.
Add them to the rice.
Add enough salt to the rice.
Mix them well.
Taste it … if needed … adjust the salt.
The tasty seasoning rice is ready.
