Coconut Milk Rice

Serving for:

As a main meal it serves for 4 people.
As a side meal it serves for 8 people.

Time:

Preparation time : 10 min.
Cooking time : 15 + 25 : 40 min.
Total time : 50 min.

Ingredients:

Rice --- 2 cups
Coconut milk --- 2 cups (or) Coconut --- 1 medium
Water --- 2 cups
Ghee --- 2 Tsp
Cinnamon stick --- 2 (break them into pieces)
Cloves --- 8 no.’s
Cardamoms --- seeds of 2 pods


Green chilies --- 8 small


Onion --- 1 big one


Mint leaves --- 25-30 big leaves


Salt --- as per taste

Process of making Coconut Milk:


Break the coconut into half.
Break each half into pieces.
Separate the flesh of the coconut from the shell by using knife.
Sometimes the attachment won’t come off that easily… then try this tip ( I got it from www.nandyala.org/mahanandi/) soak those pieces in water for 5 minutes… then the water seeps between the shell and the coconut and makes easy to separate coconut from the shell.
Cut the coconut flesh into small pieces.


Grind them in a blender by adding water into it. (for one full coconut I grinded it for 3 trips… each time I poured 1 cup of water into the jar).
Cover a bowl with cheesecloth or any cotton cloth.
Pour the grinded coconut stuff onto the bowl.
Allow the liquid to drip into the bowl for few minutes.
Squeeze handfuls of coconut flesh which is left over on the top of the cheesecloth to extract as much liquid as possible.
Coconut Milk Ready... Now you can do the recipe.


Trash the coconut stuff which is left over on the cheesecloth.

Process of making Coconut Milk Rice:

Chop green chilies, onions and mint leaves.


Clean rice and keep it a side.
Heat 2 table spoons of ghee in a deep pan.
Add cinnamon stick, cardamoms and cloves.
Fry for a while.
Add chopped green chilies, onions and mint leaves.


Fry it till the onions turn to brown colour.
Add cleaned rice into the pan and fry for 5 minutes.


Transfer the stuff to rice cooker.
Add 2 cups of coconut milk and 2 cups of water.


Add enough salt to the rice cooker.
Mix it well.




Cook till done.


Wait for 5 minutes
Mix it gently and serve.
